Stuffed Pepper Soup

  • 2 lbs. ground beef, browned
  • 28 oz. can tomatoes
  • 28 oz. can tomato sauce
  • 2 cups cooked rice
  • 2 cups green pepper chunks
  • 2 beef bouillon cubes dissolved in 2 cups hot water
  • 1/4 cup brown sugar
  • 1 1/2 teaspoon salt
  • 1/4 tsp. black pepper
  1. Brown the ground beef.
  2. Combine all in large heavy kettle.
  3. Bring to a boil over medium then decrease heat and cover.
  4. Simmer slowly 45-60 mins. being careful to stir often.

    This makes 4 quarts of a very thick, hearty soup.
