Great Cream of Broccoli Soup
From: Mary
  • 3 cups water
  • 3 tsp. Redi-Base (either chicken or vegetable)
  • 1-10 oz. pkg. chopped, frozen broccoli
  • 1/4 cup onion, minced
  • 1 bay leaf
  • 4 Tbsp. butter or margarine
  • 4 Tbsp. flour
  • 1 cup light cream
  • salt & pepper to taste
  1. Saute onions in butter until soft.
  2. Blend in flour.
  3. Add water, Redi-Base, broccoli and bay leaf.
  4. Simmer until broccoli has thawed.
  5. Bring to a boil.
  6. Salt & pepper to taste.
  7. Remove from heat and add light cream.
Serve
