- 1 cup margarine, softened
- 1 cup sugar
- 2 tablespoons milk
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 3/4 cups finely chopped candied cherries, red and green
- 1/2 cup chopped pecans
- 1 cup flaked coconut
- Mix first seven ingredients together well.
- Shape into 2 rolls 2 inches in diameter.
- Add a bit more milk if too dry to hold together.
- Roll in coconut.
- Cover and chill overnight.
- Next day slice 1/4 inch thick.
- Arrange on un-greased cookie sheet.
- Bake in 375 degree oven for about 10-12 minutes or until edges are lightly browned.
Makes 4 to 5 dozen cookies.
