Honey Christmas Cookies




  1. In large mixer bowl beat margarine with electric mixer on medium 30 seconds.
  2. Add sugar, honey, vanilla and lemon peel; beat well.
  3. Add flour, beat well.
  4. Stir in ground almonds.
  5. Shape into 1-inch balls; place 2 inches apart on an un-greased cookie sheet.
  6. Using the bottom of a glass dipped in colored sugar or a cookie stamp dipped in flour, flatten cookies to 1/4-inch thick.
  7. Press whole almonds or cinnamon candies into cookies.
  8. Bake at 325 degrees for 8 to 9 minutes or until golden.
  9. Let cool on cookie sheet for 1 minute.
  10. Remove from cookie sheet; cool on wire rack.
