- 1/3 c. margarine
- 2 Tbsp. honey
- 1 tsp. finely shreadded lemon peel
- 3/4 c. ground almonds
- whole almonds or red cinnamon candies (optional)
- 1/4 c. sugar
- 1 tsp. vanilla
- 1 1/4 c. all-purpose flour
- colored sugar (optional)
- In large mixer bowl beat margarine with electric mixer on medium 30 seconds.
- Add sugar, honey, vanilla and lemon peel; beat well.
- Add flour, beat well.
- Stir in ground almonds.
- Shape into 1-inch balls; place 2 inches apart on an un-greased cookie sheet.
- Using the bottom of a glass dipped in colored sugar or a cookie stamp dipped in flour, flatten cookies to 1/4-inch thick.
- Press whole almonds or cinnamon candies into cookies.
- Bake at 325 degrees for 8 to 9 minutes or until golden.
- Let cool on cookie sheet for 1 minute.
- Remove from cookie sheet; cool on wire rack.
