Mocha Walnut Christmas Cookies




  1. Pre-heat oven to 350 degrees.
  2. Melt over hot (not boiling) water, 1/2 cup chocolate morsels.
  3. Stir until smooth; cool to room temperature.
  4. In small cup dissolve instant coffee in boiling water; set aside.
  5. In small bowl combine flour, baking soda and salt; set aside.
  6. In large bowl combine oleo, sugar, brown sugar and coffee; beat until creamy.
  7. Add egg and melted morsels; mix well.
  8. Gradually add flour mixture, stir remaining chocolate morsels and walnuts.
  9. Drop by rounded tablespoonfuls onto un-greased cookie sheet.

    Time: 10 to 12 minutes.
