7 Day Sweet Cucumber Pickle

  • 8 medium washed cucumbers
  • 7 cups sugar
  • 4 cups cider vinegar
  • 2 t. salt
  • 2 T. pickling spice (in cheesecloth bag)
  • Day 1: pour boiling water over whole cucumbers (place in plastic container like a cake ring top)
  • Day 2: drain water and repeat process
  • Day 3: drain water and repeat process
  • Day 4: drain water and repeat process
  • Day 5: drain water and slice cucumbers; make hot boiling syrup from listed ingredients and pour over cukes
  • Day 6: let cukes rest and you do the same
  • Day 7: take everything from day 5, heat to boiling, and seal in hot sterilized jars
  • Makes about 3 quarts. Takes awhile but well worth it.
