Lime Pickles
  • 7 cups sliced Cucumbers
  • 2 gallons Water
  • 2 cups of dry Lime
  • 1/2 gallon Vinegar minus one cup
  • 4 cups of Sugar
  • 1 tablespoon of Salt
  1. Mix lime, water, and cucumbers in container.
  2. Let stand for 24 hours.
  3. Then wash at least 5 times in cold water, and cover with fresh water.
  4. Let stand for 3 hours and drain.
  5. Add 1/2 gallon vinegar minus 1 cup, 4 cups of sugar, and 1 tablespoon salt.
  6. Mix well.
  7. Add cucumbers and let stand for another 24 hours.
  8. Heat for 35 min. place in jars and seal.

NOTES: Use a wide mouth jar if possible as these pickles are very firm and do not bend easily.
