Lime Sweet Pickles
From: Sheila Barnett
  • 7 lb (2 gallons) cucumbers, sliced 1/4" thick
  • 2 cups hydrated lime
  • 2 gallons cold water
Syrup
  • 5 lbs sugar
  • 3 pints vinegar
  • 1/2 cup water
  • 1 tsp celery seed
  • 1 tbs salt
  • 1 tbs mixed pickling spices
  1. Mix pickle ingredients together.
  2. Soak for 24 hours.
  3. Wash in clean water.
  4. Let set 4 hours in clean water.
  1. Mix ingredients for syrup.
  2. Bring to a boil and pour over pickles.
  3. Let stand over night.
  4. Next day, bring all to a boil and simmer 30 - 35 minutes.
  5. Add green food coloring and put in jars and seal.
