Pickled Asparagus
  • 2 cups pickling vinegar
  • 2 cups water
  • 1 tablespoons salt
  • 1 tablespoons chill peppers
  1. bring above ingredients to a boil then simmering on medium for 10 minutes.
  2. In large jar add about 4-5 tablespoons of crushed garlic (i usually put a little more depending on how much garlic you like)
  3. then add fresh dill
  4. after setting in jar cut your asparagus to fit jar.
  5. add the brine then seal & process for 20 minutes.

This is my own recipe that I had to put together. I went through all the canning books & recipes on the web but no one had it listed. This is a very popular product that people just love in Canada. My kids love to eat them just like a pickle& I use them as a garnish when I have company, also for putting in a caesar drink instead of celery. The pubs use it all the time. If purchasing this in a store we usually pay $9.00 - $10.00 a jar. Like I said it took me a couple of days to get the recipe just right and I hope you can enjoy it as much as we do.
