India Relish

  • 6lbs green tomatoes
  • 3 onions
  • 3sweet red peppers
  • 2green peppers
  • 1 3/4 cups white vinegar
  • 1 2/3 cup sugar
  • 2 tsp celery seed
  • 1 tsp cinnamon,
  • 1 tsp cloves
  • 1 tsp allspice
  • 1 tsp ground turmeric
  • 1 TBS mustard seed
  1. put all vegetables through food processor, gind not to fine
  2. DISCARD the liquid from vegetables
  3. heat the spices, vinegar and sugar in large pan
  4. heat to boiling
  5. ADD vegetables simmer for 10 min.
  6. ladle into hot sterilized jars
  7. place in hot water bath when it begins to boil time it for 10 min.
  8. remove from bath

Makes 8 pints

COMMENTS: this is excellent recipe good flavor I get great compliments from this recipe
