Parsley Biscuits
(Max always munches on a couple of these before he greets Nala ... fresh breath is important for canines too)
  • 3 cups minced fresh parsley
  • 1/4 cup finely chopped carrot
  • 1/4 cup grated Mozzarella cheese
  • 2 tablespoons vegetable oil
  • 2 3/4 cups whole wheat flour
  • 2 tablespoons unprocessed bran flakes
  • 2 teaspoons baking powder
  • 1/2 - 1 cup water
  1. Preheat oven to 350 degrees F.
  2. Lightly grease 2 baking sheets.
  3. In a small bowl, mix the parsley, carrots, cheese and oil.
  4. In another bowl, stir together the flour, bran and baking powder.
  5. Add vegetable mixture and stir well.
  6. Gradually add 1/2 cup water.
  7. Mix well, adding more water if needed to make the dough moist.
  8. Knead for 1 minute.
  9. Roll the dough to 1/2-inch thickness.
  10. Using a small dog-bone cookie cutter, or a glass, cut as many shapes as you can, re-rolling the scraps.
  11. Place them on the baking sheets.
  12. Bake 20 to 30 minutes, or until biscuits have browned.
  13. Cool on a rack.   They'll harden as they cool.
  14. Store in an airtight tin.

    Makes about 36 biscuits
