Country Fried Potatoes
  • 2 medium potatoes, sliced thin
  • 1 small onion, chopped
  • 3 teaspoons vegetable oil
  • salt & pepper
  1. Heat oil over high heat.
  2. Add potatoes and fry, turning occasionally, until they begin to brown.
  3. Add onion and fry for about 1 minute.
  4. Add salt & pepper; toss to distribute.
  5. add about 3 T water, immediately cover, reduce heat, and simmer until potatoes are tender (about 3 to 5 minutes).
