Hollandaise Sauce
  • 1/4 cup butter
  • 1/4 cup cream
  • 2 egg yolks, beaten
  • 1 tablespoon lemon juice
  • Salt to taste
  • Dash cayenne
  1. Melt butter in top of double boiler; add cream and beaten egg yolks, stirring well.
  2. Add lemon juice and salt, cook over boiling water, stirring constantly, until thick.
  3. Remove from heat and beat until light
  4. Stir in cayenne if desired.
  5. Makes about 2/3 cup.
