Creamy Bourbon Chicken with Broccoli
  • 1 bunch fresh broccoli, cooked slightly
  • 6 boneless breast of chicken
  • 1 cup flour
  • 1 tablespoon pepper
  • 1 teaspoon salt
  • 1/2-3/4 cup cooking oil
  • 1/2 cup bourbon
  • 1 pound sliced mushrooms
  • 1/2 cup sour cream
  • 1/2 cup of milk
  • 1 medium onion, chopped
  1. Place flour, pepper, and salt in a bag, shake the chicken in it.
  2. The brown in oil.
  3. Place the broccoli in the bottom of a 2 quart casserole, or baking dish, and top with the browned chicken.
  4. In a small sauce pan warm the bourbon, pour this over the chicken and broccoli.
  5. Add the onions, and sliced mushrooms.
  6. In a small bowl mix the sour cream and milk, pour over the entire dish.
  7. Baked, covered.

Note: This is good served with rice.
