Candied Bourbon Sweet Potatoes
- 6 large sweep potatoes
- salt
- paprika
- 3/4 cup brown sugar
- 1 1/2 tablespoons lemon juice
- 2 tablespoons butter
- 2 1/2 tablespoons bourbon
- Peel and cook the potatoes in boiling water until tender.
- Cut the potatoes into 1/2 inch slices, and place in a greased casserole dish with a 1/4 cup water.
- Sprinkle the potatoes with salt, paprika, brown sugar, and lemon juice.
- Dot with butter, bake uncovered for 20 minutes at 375 degrees F.
- The last 5-10 minutes of baking pour the bourbon over the potatoes.
