Sour Cream Rhubarb Squares
  • 1/2 cup butter
  • 1 1/2 cups brown sugar
  • 1 egg
  • 1 cup sour cream or yogurt
  • 2 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 cups rhubarb cut into 1/2" pieces
Topping:
  • 1/2 cup sugar
  • 1/2 cup chopped nuts
  • 1 tsp. cinnamon
  • 1 Tbsp. melted butter
  1. Preheat oven to 350
  2. Cream butter, sugar and egg
  3. Stir in the sour cream or yogurt
  4. Combine the flour, baking soda and salt
  5. Stir the dry ingredients into the wet, mixing till combined
  6. Stir in the rhubarb
  7. Pour into a greased 9 x 13" pan
  8. Bake for 35 - 45 minutes or until toothpick comes out clean - do not overbake
