RHUBARB SALAD
  • 4 cups fresh rhubarb
  • 8 large marshmallows, cut into 4 pieces each
  • 1 cup white sugar
  1. Cut rhubarb into small pieces and mix well with sugar and marshmallows
  2. Place in baking pan

BATTER:

  • 1/2 cup butter
  • 3/4 cup white sugar
  • 2 egg yolks
  • 1  2/3 cups all-purpose flour
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 1/2 cup milk
  • 2 egg whites
  • 1/4 cup white sugar
  1. Cream butter and 3/4 cup sugar
  2. Add egg yolks - cream again
  3. Sift flour, salt and baking powder together
  4. Add flour mixture to butter mixture alternately with milk
  5. Beat egg whites with 1/4 cup sugar as if for meringue
  6. Fold egg white mixture gently into batter and pour over rhubarb
  7. Bake at 350 for 30 minutes
