In large skillet, sauté onion and celery in butter; do not brown.
Add pork and cook just until done, then set aside.
In large mixing bowl, mix pork mixture with grated roll crumbs,
sauerkraut, and eggs, and blend to a smooth consistency, adding more
egg or crumbs if necessary.
Shape mixture into balls about 3/4 inch in diameter;
chill, dip in egg wash made of one egg beaten with a little milk,
and roll in cracker meal.
Deep fry at 350 degrees until brown, serve at once.
