SAUERKRAUT BALLS
  • 1 medium onion, minced
  • 1/2 rib celery, minced
  • 1 tablespoon butter
  • 3 pounds Boston butt, ground
  • 2 stale hard rolls, grated
  • 1 pound sauerkraut, well drained and ground
  • 2 eggs lightly beaten
  • 1 egg, beaten, for egg wash
  • Milk, for egg wash
  • Cracker meal for breading
  1. In large skillet, sauté onion and celery in butter; do not brown.
  2. Add pork and cook just until done, then set aside.
  3. In large mixing bowl, mix pork mixture with grated roll crumbs, sauerkraut, and eggs, and blend to a smooth consistency, adding more egg or crumbs if necessary.
  4. Shape mixture into balls about 3/4 inch in diameter; chill, dip in egg wash made of one egg beaten with a little milk, and roll in cracker meal.
  5. Deep fry at 350 degrees until brown, serve at once.
