PIZZA SUPREME
    Crust:

  • 1 1/2 c. warm water
  • 2 pkg. yeast
  • 1 Tbsp. sugar
  • 1 Tbsp. salt
  • 3 Tbsp. oil
  • 2 c. brown flour
  • 2 1/2 c. white bread flour
  1. Combine water, oil, sugar and salt in large mixing bowl.
  2. Sprinkle yeast over water mixture and stir until dissolved.
  3. Gradually add brown flour and beat well.
  4. Slowly add white flour and knead until elastic and dough does not stick to hands.
  5. Shape into ball; place in a greased bowl, turning to grease top.
  6. Cover and let rise in a warm place (85 degrees), free from drafts one hour or until doubled.
  7. Punch dough down and divide into 3 parts.
  8. Roll each to fit a 12-inch pizza pan.
  9. Grease pan and insert pizza dough, turning edges up.
  10. Let rise 30 minutes and bake at 300 degrees for 10 minutes.
  11. While dough is rising, make pizza sauce.

Pizza Sauce and Topping:

  • 2 Tbsp. olive oil
  • 1 clove garlic, minced
  • 1 large onion, chopped
  • 3 Tbsp. chopped parsley
  • 1 (28 oz.) can tomatoes, undrained
  • 1 (6 oz.) can tomato paste
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1 1/2 tsp. oregano
  • 1/4 tsp. pepper
  • 1 lb. sausage
  • 3 c. (12 oz.) Mozzarella cheese, shredded
  • 2 c. (8 oz.) Cheddar cheese, shredded
  • 3/4 c. sliced ripe olives
  • 1 1/2 c. sliced fresh mushrooms
  • 1 small green pepper, sliced
  • 1 small red pepper, sliced
  • 1 (3 1/2 oz.) pkg. pepperoni, sliced
  • 1 c. Parmesan cheese, grated
  1. Heat olive oil.
  2. Add onion, garlic and parsley.
  3. When tender, add tomatoes that have been run through blender or food processor.
  4. Add tomato paste, sugar, salt, pepper and oregano.
  5. Bring to boil and then simmer for one hour.
  6. Remove from stove and cool.
  7. Meanwhile, cook sausage over medium heat stirring to crumble.
  8. Spread sauce over each pizza crust evenly, leaving a 1/2-inch border around edge.
  9. Spread the crumbled sausage over the tomato sauce.
  10. Add the olives, mushrooms, red and green peppers, Cheddar and Mozzarella cheese.
  11. Place the sliced pepperoni over top and then add the Parmesan cheese.
  12. Bake or wrap in freezer paper until ready for use.

    Freezes very well.

    Cooking temperature: 450 degrees.

    Cooking time: 15 to 20 minutes.

    Serves 12.
