Pineapple Glazed Yams
  • 1 8-ounce container pineapple chunks, save juice
  • 2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon black pepper
  • 1 teaspoon margarine
  • 1/2 pound yams, cooked and sliced in 1/4 inch slices (halve each slice)
  1. Preheat oven to 350 degrees.
  2. Combine juice with cornstarch, salt, pepper, and cinnamon
  3. Cook until thickened, stirring constantly
  4. Combine yams and pineapple in 8-inch casserole dish.
  5. Stir in sauce.
  6. Dot with margarine.
  7. Cover with foil and bake for 10 minutes
