Microwave Peanut Brittle
Microwave must have at least 700 watts of power
- 1 cup raw peanuts (I use unsalted baked, because I can't find unbaked)
- 1 cup white sugar
- 1/2 cup light corn syrup
- 1/8 teaspoon salt
- 1 teaspoon margarine
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- In 1 1/2 quart microwave safe bowl stir together peanuts,
sugar, syrup and salt
if using baked peanuts do not add until second 4 minutes
- Cook 4 minutes on high
- Stir well and cook 4 more minutes on high.
- Stir in margarine and vanilla
- Cook 2 minutes longer on high
- Add baking soda and stir quickly until light and foamy
- Immediately pour on lightly greased cookie sheet
- Cool and break
