Easter Soup
  • 2 chicken breasts or 1 whole chicken
  • 2 sticks dry pepperoni sausage
  • 3 lb. pork spareribs
  • 1 small Ham
  • escarole or cabbage dandelions or spinach
  • 1 lb. ground beef
  1. In 8 quart pot, make soup stock with chicken, pepperoni, spareribs and ham.
  2. Cook about 2 hours.
  3. Drain and save all meats.
  4. Make tiny meatballs from beef; add to boiling soup broth.
  5. Simmer 20 minutes.
  6. Add cooked, drained vegetables and continue to simmer for 10 minutes.

    Serves 12 to 15.
