Blackberry Cobbler
From:Nick and Barbara Melton
  • 1 cup butter or margarine
  • 1 cup all-purpose soft-wheat flour (such as White Lily)
  • 1 1/2 teaspoon Baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 cup milk
  • 2-3 cups blackberries sweetened with 1/4 - 1/2 cup sugar degree of sweetness required.
  1. Preheat oven to 350 degrees.
  2. Melt butter in a 9x 13 ovenproof dish.
  3. Mix the flour, baking powder, salt, sugar and milk into a batter.
  4. Remove the hot dish with melted butter from oven and pour in the batter on top of the butter.
  5. Spoon the berries evenly over the batter.
  6. Bake about 30 minutes until the batter rises up and around the berries and is lightly browned.

    Other fruit or combinations may be used. Peaches, strawberries, blueberries, cherries are good, too, but blackberries are Nick's favorite.
