Yellow Squash Casserole
From: Dorothy Melton
  • Cook enough squash with 1 medium onion to make approx. 2 cups, in 1/3-cup water.
  • Mash with potato masher

    add:

  • 1/4 cup oleo
  • 1/4 teaspoon salt
  • 3/4 cup grated cheese (American or cheddar)
  • 1/4 teaspoon soy sauce
  • 1 Tablespoon sugar
  • 2 beaten eggs
  • 1/8 teaspoon pepper
  • 1/8 teaspoon paprika
  • 1/4 cup cracker or bread crumbs
  1. Heat oven to 350 degrees.
  2. Pour mixture, except cracker crumbs, into 1-1/2 quart casserole dish.
  3. Bake for 20 minutes, then sprinkle top with 1/4 cup crumbs and 1/8 teaspoon paprika.
  4. Bake for 15 or 20 minutes longer or until firm.
