Fried Green Tomatoes-My Way

  • 4 large green tomatoes
  • 3 Tablespoons white cornmeal
  • 3 Tablespoons flour
  • 3 Tablespoons butter or margarine
  • 3 Tablespoons cooking oil
  • Salt and pepper to taste
  1. Cut tomatoes in 1/4-inch slices.
  2. Combine meal, flour, salt and pepper.
  3. Dip tomato slices in cornmeal and flour mixture.
  4. Melt butter or margarine in skillet and add oil, bringing to medium heat only.
  5. Sauté tomatoes over medium heat until brown on both sides, turning ONLY ONCE.
