Cornish Game Hens with Walnut Apple Stuffing

  • 6 Cornish game hens
  • 1/4 cup chopped onion
  • Paprika
  • 3 oz. Walnut pieces
  • Salt
  • 2 apples, cored and chopped
  • Pepper
  • 1/2 cup port wine
  • Oil
  • 1/2 teaspoon salt
  • 3 cups cooked wild rice
  • pepper
  • 1/4 cup chopped celery
  • 1 tablespoon parsley flakes
  1. Wash hens and pat dry; season with salt, pepper, and paprika.
  2. Rub lightly with oil.
  3. Add remaining ingredients for stuffing and toss lightly.
  4. Divide Stuffing among hens.
  5. Truss hens.
  6. Place in roasting pan and roast 1 hour or until tender at 350 degrees.
