Crab Cakes
From:Betty Jo Billips Coward Galbreath
  • 2 cups crabmeat
  • 1 Tablespoon mayonnaise
  • 1 1/2 teaspoon salt
  • flour
  • 1 teaspoon dry mustard
  • 1 egg, slightly beaten
  • 1/2 teaspoon pepper
  • 2 Tablespoon water
  • 1 egg yolk
  • Bread crumbs
  • 2 teaspoons Worcestershire sauce Butter or margarine
  1. Mix crabmeat, salt, mustard, pepper, egg yolk, Worcestershire, and mayonnaise.
  2. Make mixture into small cakes.
  3. Dip cakes into flour, egg, then into crumbs.
  4. Quickly fry in solid oil on high heat until brown.
