Molded Pineapple Cheese Salad
From: Aunt Kate
  • 1 1/2 tablespoons gelatin
  • 1/4 cup cold water
  • 1/2 cup sugar
  • juice of one lemon
  • 2 cups crushed pineapples
  • 1 cup cold water
  • 4 oz. Cream cheese
  • 1/2 teaspoon salt
  • 1 cup whipped cream

    1. Soften gelatin in cold water.

    2. Heat sugar and water to boiling point.
    Remove from heat, add gelatin and stir until dissolved.
    Cool.

    3. Add softened cream cheese, pineapple, lemon juice and salt.
    Stir well and chill.

    4. When mixture is thick like syrup fold in whipped cream.
    Chill.
