Potato Salad
From:Margaret Melton
  • 4 large potatoes, cooked and cubed
  • 1 onion, chopped fine
  • 4 stems celery, chopped fine
  • 2 hard boiled eggs, sliced

    Put these ingredients in a bowl.

  • 1 beaten egg
  • 1/2 cup sugar
  • 1 Tablespoon flour
  • 3/4 cup water
  • 1/4 cup vinegar
  • 2 Tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon dry mustard
  1. Combine ingredients in order given, stir after each.
  2. Boil until thick.
  3. Cool before adding to bowl with potatoes.
  4. Mix and refrigerate for at least 8 hours before serving.
