My Spring Time Strawberry Pie

(Do not attempt this unless you are really serious. It is a wonderful dessert and deserves your undivided attention during preparation!)

  • Make favorite large-sized pie crust and set aside.
  • Make the following cream pie filling:

    Sift together into a large saucepan.

  • 1/3 cup plain flour
  • 2/3 cup sugar
  • 1/4 teaspoon Salt
  • Gradually add 2 cups scalded milk.

  • Cook over moderate heat, stirring constantly, until mixture boils and thickens.
  • Remove from heat.

    Add small amount of mixture to 3 slightly beaten egg yolks.

  • Then add egg yolks to mixture, return to heat and cook 1 additional minute.
  • Stirring constantly.
  • Remove again from heat and add 2 Tablespoons margarine and 1/4 teaspoon vanilla.
  • Cool thoroughly before putting in prepared cooked and cooled pie crust.

    Wash and cap fresh medium-sized strawberries, sufficient in number to do the following: Place one strawberry in the center of the pie with the point up.

  • Then begin placing strawberries in a ring around the first berry, continue to place in ring until the entire filling is covered.
  • Melt medium-sized jar of strawberry preserves and dribble over entire pie.

    (One of the secrets to this pie is a firm filling)
